...{HUMBLE PIE}...This past month at Confection Connection I served up a themed pie recipe for each month until we meet again in January. September's Pie went with the topic of the night which was HUMILITY. I suggested that next time you need to say "I'M SORRY" forget the card and flowers, instead bake a homemade Humble Pie, put it on a cute plate, wrap it up, and tie on a note of apology.
Although, I did not need to say SORRY to anyone (that I know of), I want to keep up with my goal of baking these "Pies of the Month" so tonight I baked this custard-like pie. This recipe is so easy, it was indeed a very HUMBLE pie!

REVIEW: After 45 minutes of baking, my pie never really set, so I had to increase the baking time by 10 minutes. The center was still runny. However it tasted really good (and fattening). What I found in my research re: the bake time/consistency is that this is an old Southern recipe known as Vinegar Pie. HERE is another variation that I think I would try next time to see if I had more luck getting it to set. Another thought was that my butter was too soft. Anyone else try this recipe? Perhaps we need a Pie of the Month Club...Hmmm...
